Profile: So-shu
The Sake Service Institute created four classifications for sake based on aroma and flavor. One of these classifications, So-shu, or refreshing sake, is the lightest and simplest of the four. So-shu is modest overall, with a light aroma and flavor. This is the most broad classification, as any grade of sake (daiginjo, junmai, honjozo, ginjo, etc) often falls under this category. It is appropriate to serve so-shu in a traditional ochoko or standard sake cup. Pairings include: sashimi, fresh oysters, simple yakitori and tofu.
