Kagoshima Prefecture is the heart of shochu production in all of Japan. It is known for its sweet potato shochu, or Imo shochu production. The prefecture is known for its production of high quality sweet potatoes, and each distillery is proud to use this local product. The prefecture is home to over 100 different distillers and over 2,000 shochu varieties.
