The aromatics and subtle complexities of this Junmai Daiginjo make it a true stand out. Notes of apple, pear and sweet rice on the nose. Its fruit-forward flavor is complemented by a creamy and smooth mouthfeel. Its lightly golden hue can be explained from the lack of carbon filtration, making it a muroka sake. Aged at 14°F for a year after brewing. Born produces only junmai sake from premium rice sourced through local farmers and subsoil water from 180 meters below ground.
