Kyoto Prefecture is part of the Kansai Region, expending to the sea of Japan. Its capital city, Kyoto is known for its traditional and historical sights, and was the country’s capital for more than one thousand years. The city now has a population of nearly 1.5 million. Kyoto Prefecture is situated in a basin, which gives the region a unique climate. The climate, which yields good quality rice, along with the abundant “soft” water sources in the Fushimi region gives Kyoto sake its signature flavor and mouthfeel. A typical Kyoto sake is gentle and soft but with plenty of umami. Kyoto sake is known as “fushimi no onna sake” or feminine sake.
