Brewery: Tamano Hikari
Tamano Hikari was given its name from the Chief Priest of the Hayatama Shrine in 1673. The name means that sake lights up the spirit of god and goddess. The brewery’s home, Fushimi, Kyoto is famous for its very soft underground water, which has been used to brew Tamano Hikari sake for over 300 years. Tamano Hikari also polishes all of its rice within the walls of its brewery, which today is a very rare practice to come by. It was the first brewery of its time to halt the use of added alcohol, sugars and preservatives in sake brewing. It is widely known as the brewery that reestablished authentic junmai sake.
