Brewery: Kato Kichibee Shoten
“梵Born” is a Sanskrit word meaning “innocent pureness” and “capturing the truth”, representing the brewery’s strong belief in second chances and karmic rewards for hard work. The brewery, Kato Kichibee Shoten, was established in the Fukui Prefecture in 1860, at the time only naming its top sakes “Born”. However, since 1963, the brewery started making only premium ginjo style sake, and began naming all of its sakes under the “Born” brand name. In the Showa Era (1926), the emperor began using Born sake for Japan’s ceremonies, festivals and international guests as Japan’s representative brand. This tradition continued until recent years, when the Japanese Prime Minister presented Born Dreams Come True to former President Barack Obama. The brewery does not believe in adding distilled alcohol, therefore it only makes Junmai sake. The brewery only uses the rice from the farmers that they have a contract with, and always gets Yamada Nishiki harvested in Hyogo and Gohyakumangoku harvested in its home, Fukui. The sakes are made with water sourced from a 180-meter deep well from the Hakusan Mountains.
