Brewery: Honda Shoten
Honda Shoten is a sake brewery in Hyogo that produces some of the most pristine sake in the world, sold under the brand name Tatsuriki, or “Dragon Power”. While the brewery has been around since 1921, about 45 years ago the founders began to drink wine and were heavily inspired by its focus on region and soil. Ever since, the brewery has made top-grade ginjo style sake utilizing this regional concept. Tatsuriki sake is made specifically with Yamada Nishiki rice from the “Special A” region in Hyogo, which grows the best Yamada Nishiki rice available in Japan. Each of its sakes are named after the region in which the rice was derived, highlighting the rice flavors of each area. The 93-year-old president, Takeyoshi Honda, has dedicated his life to researching Yamada Nishiki, and he continues his aim today to make sake’s Romanée-Conti.
