This sake is delightfully rough around the edges, with fruity aromatics and a plush mouthfeel. A big-boned sake with a slight burn and a smooth finish. Undiluted and only pasteurized once in the tank. “Kakushi” means hidden, signifying the brewers’ tendency to hide this sake so they can drink it themselves. Ryujin employs only 6 brewery workers, including the toji, making this a true craft sake brewery.
