Region: Hokkaido
Hokkaido is the northernmost prefecture in Japan and the second largest island. It is a large prefecture, its land mass accounting for 22% of Japan. Compared to other prefectures, it is relatively undeveloped, with only around 100 years of history. The island was settled by the Ainu people, indigenous inhabitants who’s population today is around 24,000 people. Hokkaido has the coldest weather in Japan, the massive snowfall it receives gives it the perfect climate for sake brewing. The cold temperature here helps Hokkaido produce mostly light and clean styles of sake. There are around 15 sake breweries in Hokkaido, most of which are located near rivers. These breweries take advantage of the fresh mountain spring water to brew their sake. All Regions »
