Hiroshima is a prefecture in southwest Japan, perhaps most known for the first atomic bomb in history that killed over 100,000 people during WWII. The prefecture is mountainous with a pleasant climate. The capital city, also called Hiroshima, has a modern feel and a population of nearly 3 million, despite having been largely destroyed by the bombing in 1945. The water in Hiroshima is very soft, making it difficult for the yeast to activate during the sake brewing pricess. A scientist from Hiroshima discovered how different types of water affect the brewing process, and he later developed a soft water brewing method. He passed this method to the local Mitsu Toji brewing school, and the quality of Hiroshima sake began to drastically improve.
