Region: Aomori
Aomori is the northernmost prefecture of Japan’s main island of Honshu, which faces Hokkaido. It wasn’t until 1871 that this region became an official prefecture. Aomori has a cold climate and very clean water, which are two of the most important conditions for pristine sake brewing. There are around 30 different sake breweries in Aomori, and many of these breweries’ tojis are certified Nanbu Tojis. The main sake rice types, or shuzo kotekimai harvested in Aomori are Hana Fubuki, Miyaminishiki, Sasa Nishiki and Akita Komachi.
