Grade: Honjozo
Honjozo sake is made up of rice, rice koji, water, yeast, and a small amount of pure distilled alcohol. The rice used to brew this sake must be polished at least to 70% of its original size, meaning at least 30% of the outer layer is taken off. Honjozos are typically very light on the palate, with a flavor that doesn’t tire of drinking. Because of their relatively uncomplex flavor profile, they are a great option for warming.
