Brewery: Takasago Shuzo
In Takasago’s quest for recognition as Hokkaido’s most beloved sake brewery, they carve these words into each drop of precious sake: “Anzen (Safe), Anshin (Peace of Mind), Oishii (Delicious)”. The village of Asahikawa in Hokkaido is known for its extremely cold and snowy climate, which the brewery takes advantage of. In 1990, they began utilizing a himuro, or snow dome, sake aging method. Their himuro maintains a temperature of 28°F and humidity of 90%, preventing any oxidation, evaporation of aroma or degradation of sake quality. Takasago Shuzo strives to create a kind of sake that can truly only be produced in Ashikawa, by using water from the Asahikawa Hokkaido Taisetsu Mountain and with local Hokkaido rice.
