Brewery: Katsuyama
Katsuyama is a sake brewery with traditions lasting well over three centuries. The brewery was established in 1688 by Japan’s most famous samurai and military commander Date Masamune, in order to brew sake to be enjoyed exclusively by the feudal lords. Brewing only junmai-shu, it aims to create a clean and elegant umami flavor that goes well with any cuisine. The brewery only produces one tank of sake per week, using meticulous and focused sake brewing methods.
