Brewery: Kamotsuru
Kamotsuru has been at the forefront of rice polishing technology since the brewery’s beginning. It purchased Japan’s first power-driven rice milling machine in 1898, allowing its milling rates and subsequent rice quality to rise above any other brewery at the time. It launched the first ever daiginjo-grade sake sold to the public, which raised the standard for high quality rice milling. Since 1970, Kamotsuru has won the Gold Medal at the annual Japan Sake Awards 18 times. The famous restaurant Sukiyabashi Jiro, as featured in the film Jiro Dreams of Sushi, offers exclusively Kamotsuru sake at its venue in Tokyo.
