Brewery: Ikekame Shuzo

Ikekame Shuzo was founded in 1875 in the Fukuoka prefecture, which is known mainly for its shochu production. This sake brewery uses water from the Chikugo river, which is the largest river in Kyushu island. Ikekame has significantly contributed the development of sake brewing in this region, and has received medals for the positive impact on the local economy through the success of its brewery. Ikekame Shuzo has incorporated the use of black koji in its sake brewing, which is typically only used in shochu production.
