Brewery: Hakkaisan
Hakkaisan is located in Minami-Uonuma, at the heart of the Niigata prefecture in central Japan. The brand is named after Mt. Hakkai, which is one of Echigo mountains. During the winter season, the snow can reach a depth of 6-9 feet at the foot of Mt. Hakkai. While snow country living is not easy, the pristine water and purified air from the snow are natural gifts for Hakkaisan sake. Hakkaisan has been brewing premium sake since 1922, and it has become a pioneer in applying the highest standard of sake brewing methods to its whole line. Hakkaisan polishes all of its rice at least to 60%, uses hand-made koji, a small batch moromi, and a slow, temperature controlled fermentation. This approach to sake production creates a smooth and pristine clarity on the palate, revealing Hakkaisan’s signature traits–elegant umami, smooth texture and a clean finish.
