Brewery: Amabuki Shuzo
Amabuki was established in 1688, during the Genroku period in the Saga prefecture. The brewery is dedicated to making sakes only with yeast cultivated from flowers, such as pink nadeshiko, sunflower and strawberry yeasts. Because yeast affects sake’s aroma, Amabuki sake has a highly floral fragrance, signature to its brand. Amabuki takes unique care of its resources. No pesticides are used in their rice paddies, rather, in order to keep pests away from crops they keep a flock of free run ducks on the property to eat the invasive insects and plants.
