Region: Ishikawa
Ishikawa prefecture is located in the central region of Honshu island, bordering the sea of Japan. The most popular city is the capital Kanazawa. It is known for its famous Kenroku-en, or landscape garden, which is recognized as one of the three most beautiful in Japan. Ishikawa is also known for its massive production of rice – Annually, it has an output of around 15 million metric tons. The cold weather in Ishikawa makes it a great place to brew sake. Most breweries use high quality water from the sacred Mt. Hakusan, making Ishikawa sake very special. The Noto Toji guild originated here, who used to teach brewers to make rich and sweet sake, but is now making the transfer light and dry styles. All Regions »
