Brewery: Suigei
Suigei, or “Drunken Whale”, is a sake brewery from the Kochi prefecture. This region of Japan is known for its local citizens’ high alcohol consumption, hence the brewery’s nickname “drunken whale”. Suigei has sourced its sake brewing water from the Kagami river since 1860, which today is still one of Japan’s most pristine sources of water. The lack of iron and manganese in this water gives Suigei sake its signature sharp texture.
