Brewery: Shata Shuzo
Shata Shuzo is a brewery based in Ishikawa, which has been surrounded by a dense and mysterious forest since its beginning in 1823. The locals believed that the forest contained a goblin that protected the mountain, but even it couldn’t resist dancing after tasting the brewery’s sake. Hence the name Tengumai, or “goblin dance”. The brewery also lies in the shadow of one of Japan’s largest volcanic mountains, Mt. Haku, and it brews its sake with the mountain’s naturally filtered volcanic water.
