Brewery: Muromachi
Established in 1688, Muromachi Shuzo is the oldest sake brewery in the Okayama prefecture. The brewery uses only locally grown Omachi rice in its sake, which is the only pure rice strain left in Japan. Omachi rice is the grandparent of other popular sake brewing rice types such as Yamada Nishiki and Gohyakumangoku. Because of its incompatibility with chemical fertilizers, Omachi rice is very difficult to grow, and is often called “maboroshi”, or “phantom rice”, due to its tendency to disappear if not treated carefully. Despite this challenge, Muromachi Shuzo is dedicated to solely using its local Omachi rice, making it a very special brewery. Muromachi also uses local Omachi spring water, which is one of the top water sources chosen by the Japanese Ministry of Environment, due to its pristine conditions.
