Brewery: Asahi Shuzo

Asahi Shuzo, better known as the brand Dassai Sake, was established in 1948 in the Yamaguchi prefecture. It has become a highly regarded sake brewery internationally, due to its refined and relatable flavor. It’s focus lies in balancing traditional brewing methods with cutting edge technology, and this strategy has been highly successful. Dassai brews only a small line of Junmai Daiginjo sake, and has found the perfect recipe for each that they strictly follow. The Dassai brewery is located in the mountainous region of the Yamaguchi prefecture, and it brews with extremely soft water from a 60-meter deep well on its land.
